Fall has officially started according to the calendar, but summer is hanging on here in Indiana. However, I know that summer’s last hoorah isn’t going to last for much longer. And this Crock Pot White Bean Chili is perfect for the coming fall days! You can throw it together in no time, and everyone will be asking for more!

Ingredients forCrock Pot White Bean Chili

  • 1 lb boneless, skinless chicken breasts
  • 4 15.5 oz cans Great Northern Beans
  • 16 oz jar salsa
  • 8 oz pkg shredded colby jack cheese
  • 2 teaspoons ground cumin
  • 1/2 cup chicken broth
  • optional: 12 oz can beer or 1.5 cups chicken broth

How to Make White Bean Chili in a Crock Pot

  1. Put all your ingredients in your 6-quart crock pot (I used my 6-quart Crock Pot 5-in-1 Multi-Cooker) except for your chicken and optional broth/beer and stir
  2. Add in your chicken breasts and use a spoon to press them down in your chili
  3. Add in additional liquid for thinner consistency, if desired
  4. Cover and cook on low for 4 hours
  5. Remove your chicken, shred it, return it to your chili and stir

Crock Pot White Bean Chili Notes

  • If you want to spice it up a bit, you can use pepper jack cheese instead of colby jack.
  • As with any of our recipes, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish.
  • All slow cookers cook differently, so cooking times are always a basic guideline and shouldalways be tested first in your own slow cooker and time adjusted as needed.

  • Put all your ingredients in your 6-quart crock pot (I used my 6-quart Crock Pot 5-in-1 Multi-Cooker) except for your chicken and optional broth/beer and stir

  • Add in your chicken breasts and use a spoon to press them down in your chili

    Is this meal freezer friendly? Can I freeze leftovers for future meals? If so how long does it usually keep?

      I haven’t tried freezing this one. I think it would work. In general, you can keep a freezer meal for 3 months or so. If you give it a try, let me know how it works!

    Is the “optional 12 oz can of beer or 1.5 cups of chicken broth” in addition to the 1/2 cup of chicken broth or is it “optional” meaning only to be used to achieve a thinner consistency? If not, then the total liquid would be 12 oz of beer or 1.5 cups of broth? Wou;d like to make this but do not want to add too much liquid. Thanks!!

      The beer/1.5 cups of broth is in addition to the 1/2 cup of broth. It is a matter of preference. If you like your chili thicker, you don’t have to add in the beer or additional broth. If you would like it thinner, you can add it. It is totally up to you. Make it your own! Enjoy!

    Mild or hot salsa? Can you use chilies in place of or with?

      I used mild since I can’t handle spicy, but if you prefer spicy foods, you could definitely use hot. If you want chilies in it, I would use them in addition to, but not in place of the salsa. Enjoy!
