Ingredients for cheesy chicken Dorito casserole

This recipe uses simple ingredients. I’m guessing you likely have some of these at home in your fridge or pantry already!

  • Doritos – we like Nacho cheese Doritos flavor but you can use different Doritos flavors to suit your taste, especially if you want to spice it up! You can also use regular tortilla chips. This would make the flavor more mild but with the same crunchy texture.
  • Cooked chicken – you can use baked, poached chicken breasts, leftover cooked or rotisserie chicken.
  • Sour cream – we used full fat sour cream in this recipe
  • Cream of chicken soup- you can also substitute cream of mushroom soup.
  • Canned Corn
  • Diced Tomatoes -we used plain diced tomatoes or you can susbstitute rotel tomatoes for the regular diced tomatoes.
  • Chopped green chiles
  • Ground cumin
  • Chili powder
  • Garlic powder
  • Sharp cheddar cheese – I prefer to shred my own cheese or you can use the pre-shredded package cheese. Other varieties of cheese that work well in this recipe include Mexican fiesta blend, mild or medium cheddar, Monterey Jack and Pepper Jack cheese.
  • Substitute 1 package of taco seasoning for the ground cumin, chili powder and garlic powder. You can also use 2 tabelspoons of homemade taco seasoning.

How to make cheesy Dorito chicken casserole

I’ve included some visual photos and notes below to help you along the way with the recipe card. The full printable recipe card with ingredients and step by step instructions can be found at the bottom of this page.

Preheat oven to 350°F. Grease a 9×13-inch baking dish with butter or cooking spray.

Open the Doritos bag to release the air from the bag and, closing the top of the bag, squeeze to crush the Doritos into small bite-sized pieces.

If you like, you can set aside a few whole Doritos for garnishing each plate.

Spread half of the crushed Doritos into the bottom of prepared baking dish.

Set the remaining Doritos aside. You will need them after you mix the filling.

In a large mixing bowl, combine cooked chicken, sour cream, drained canned corn, 1 and 1/2 cups of the shredded cheddar cheese, drained tomatoes, green chiles, cream of chicken soup, ground cumin, garlic powder and chili powder. Stir until combined.

Next, you’re going to spread the chicken mixture on top of the crushed Doritos. I find that the easiest way to do this is to scoop it out place one dollop in each corner and two in the middle.

Then, spread it out with a spoon. Otherwise, it’s tricky to get the Dorotis to stay in place!

Sprinkle remaining Doritos on top, followed by the remaining cheese. Now, you’re ready to pop this creamy chicken casserole in the oven.

Bake in 350°F oven for 25 minutes. Cheese will be melted and the Doritos on top wil be nice and crunchy when it’s done. It should also be bubbling at the edges.

Storage instructions

Storage – Store cooled casserole then wrap the casserole dish with plastic wrap or carefully transfer to an airtight container. You can store this leftover casserole in the refrigerator for three to four days.

Freezing – I do not recommend freezing this casserole. The creamy sauce does not lend itself well to freezing.

Reheating Doritos Casserole – Cover the Dorito casserole loosely with foil and bake in a 350°F oven for 20 to 25 minutes until heated through. You can reheat individual servings in the microwave for 1 to 2 minutes.
