Recipe faq's

What's the difference between a cobbler and a crisp?

Overall, while both cobbler and crisp are delicious desserts that use different types of fruit as their main ingredient, the texture and type of topping used are what sets them apart. Cobbler has a biscuit-like or cake-like topping, a crisp has a streusel-like topping made from flour, sugar, and butter like myApple crisporStrawberry Rhubarb Pecan Crisp.

Can I use frozen berries?

I prefer to use fresh fruit but you can use frozen berries, no need to thaw them first. Just be aware that frozen berries will produce a more liquid filling.

Can cobbler be made in advance?

Yes, making cobbler ahead of time can be a great way to save time when you're preparing for a special occasion or when you want to have dessert ready for a weeknight dinner. When you're ready to serve the cobbler, you can reheat it in the oven at 350°F (180°C) for 15-20 minutes or until warmed through. Alternatively, you can heat individual servings in the microwave for 30 seconds to 1 minute. You can store the topping and fruit filling separately and assemble the cobbler just before baking.

Can you freeze blackberry cobbler?

Yes, let it cool completely, then wrap it tightly with plastic wrap and aluminum foil, or place it in an airtight container or freezer-safe bag. Cobbler can be frozen for up to 3 months. When you're ready to serve the cobbler, thaw it in the refrigerator overnight, then reheat it in the oven at 350°F (180°C) for 15-20 minutes or until warmed through.

Ingredients

  • 6 cups of berries we used 3 cups blackberries and 3 cups blueberries
  • 1 ½ cup granulated sugar plus ¼ cup, divided
  • 1 tablespoon lemon juice
  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • 6 tablespoons unsalted butter melted
  • ¼ cup of whole milk

Instructions

  • Wash berries and set aside (they do not have to be completely dry), and sprinkle with ¼ cup of granulated sugar, and lemon juice and set aside for 15 minutes while you prep the topping (Note: this allows the berries to create juice that will be essential to the dish).

  • Preheat oven to 375F degrees, lightly grease a 9x13 pan and set aside. In a large bowl, whisk together all-purpose flour, 1 ½ cup sugar, salt, and baking powder until fully incorporated.

  • Pour in the melted butter and milk and mix until fully incorporated. The dough will be lightly damp all over, with no dry crumbs.

  • Pour the berries and any juices into the bottom of the 9x13 pan and unevenly cover it with flatted stones of the dough mixture. (Note: keep the dough the same thickness, but the sizes of the cobblestones can differ, and will not cover all the berries).

  • If desired, sprinkle another tablespoon or two of sugar over the top and bake until golden brown, about 35-40 minutes. Allow it to cool slightly and enjoy.
